Swedish Parsnip Soup

Ingredients

  • 500g parsnips, peeled and chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 4 cups vegetable or chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. 1. In a large pot, melt the unsalted butter over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant.
  2. 2. Add the chopped parsnips and diced potatoes to the pot, and cook for a few minutes, stirring occasionally.
  3. 3. Pour in the vegetable or chicken broth, and bring the mixture to a gentle boil.
  4. 4. Reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the parsnips and potatoes are tender.
  5. 5. Using an immersion blender or a regular blender, puree the soup until smooth and creamy. If using a regular blender, be sure to blend in batches and vent the lid to prevent steam build-up.
  6. 6. Return the pureed soup to the pot and stir in the heavy cream.
  7. 7. Season the soup with dried thyme, ground nutmeg, salt, and pepper to taste. Adjust the seasoning as needed.
