Swedish Cabbage Rolls (Kåldolmar)

These savory cabbage rolls are a traditional Swedish comfort food, filled with a flavorful mixture of ground meat, rice, and spices, then simmered in a rich tomato sauce until tender.

Ingredients

  • 1 large head of cabbage
  • 500g ground beef or pork
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground allspice
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 2 cups tomato sauce
  • 1 cup beef or vegetable broth
  • 2 tablespoons butter

Instructions

  1. 1. Bring a large pot of water to a boil. Carefully remove the core from the cabbage and blanch the whole head of cabbage in the boiling water for about 5 minutes, or until the leaves are softened. Remove from water and let cool slightly.
  2. 2. In a mixing bowl, combine the ground meat, cooked rice, chopped onion, minced garlic, allspice, nutmeg, salt, and pepper. Mix well.
  3. 3. Carefully separate the cabbage leaves, cutting away any thick stems. Place a spoonful of the meat mixture onto each cabbage leaf and roll up, tucking in the sides as you go.
  4. 4. In a large skillet, melt the butter over medium heat. Arrange the cabbage rolls seam side down in the skillet.
  5. 5. Pour the tomato sauce and beef or vegetable broth over the cabbage rolls. Cover and simmer for about 45 minutes to 1 hour, or until the cabbage rolls are tender and cooked through.
  6. 6. Serve the cabbage rolls hot, spooning some of the sauce over the top. Enjoy!
