Princess Cake

"Prinsesstårta" is a Swedish dessert also known as Princess Cake. It's a traditional Swedish layer cake that consists of sponge cake layers, pastry cream, and whipped cream, all topped with a layer of green marzipan.

Here's a basic recipe for Prinsesstårta:

Ingredients

For the Sponge Cake:

  • 4 eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup cornstarch
  • 1/2 cup unsalted butter, melted and cooled

For the Filling:

  • 2 cups vanilla pastry cream (homemade or store-bought)
  • 1 cup whipped cream

For the Assembly:

  • 500g green marzipan
  • Powdered sugar (for rolling out marzipan)

Instructions

Sponge Cake:

  • Preheat the oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  • In a large bowl, beat eggs and sugar until pale and fluffy.
  • In a separate bowl, sift together flour, baking powder, and cornstarch.
  • Gently fold the dry ingredients into the egg mixture, followed by the melted butter.
  • Divide the batter evenly between the prepared pans and smooth the tops.
  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool completely.

Assembly:

  • Roll out the marzipan on a surface dusted with powdered sugar to fit the size of the cakes.
  • Place one sponge cake layer on a serving plate. Spread a layer of vanilla pastry cream over the cake.
  • Add the second cake layer and cover it with a generous amount of whipped cream.
  • Place the rolled marzipan over the entire cake, covering it like a dome. Trim off any excess.
  • Optional: You can decorate the marzipan with a pink marzipan rose or other decorations.

Chilling:

  • Allow the cake to chill in the refrigerator for a few hours or overnight to set.

Serving:
