Lemon and Lime Mousse with Licorice and Raspberries
Treat yourself this delicious mousse with a blend of citrus and licorice. Ideal for both Easter and Midsummer celebrations, this elegant treat promises to captivate your senses.
Ingredients
3 gelatin sheets
3 egg yolks
1.5 dl granulated sugar
1 lemon
1 lime
3 dl whipped cream
Garnish: Fresh mint, fresh berries or fruit, Turkish pepper (crushed)
Instructions
Place gelatin sheets in a bowl of cold water.
Wash the lemon and lime. Grate the zest of the lemon and lime, and squeeze the juice into a saucepan.
Bring to a quick boil and remove from heat.
Squeeze water out of gelatin sheets and stir them into the saucepan until dissolved.
In a separate bowl, whisk egg yolks and sugar thoroughly.
Whip the cream in another bowl, not too stiff (somewhere in between).
Pour the lemon/lime juice into the bowl with egg yolks while stirring.
Gently fold in the whipped cream using a spatula. Pour the mixture into dessert bowls.
Chill in the refrigerator for approximately 60 minutes.
Garnish with your preferred toppings, such as fresh berries, fruits, or crushed licorice candies (like Turkish pepper crushed with a mortar).
