Hallongrottor (Raspberry Thumbprint Cookies)

Easy to make and delightful, these cookies are a treat. Raspberry Thumbprint Cookies consist of shortcrust pastry that melts in the mouth and delightful raspberry jam. A classic cookie that remains just as popular.

Ingredients

  • 200 g butter, softened
  • 1 dl sugar
  • 1 tsp vanilla sugar
  • 4 dl all-purpose flour
  • 1 dl potato starch
  • Raspberry jam

Instructions

  1. Preheat the oven to 175 degrees Celsius.
  2. In a large bowl, cream together butter, sugar, and vanilla sugar.
  3. Add all-purpose flour and potato starch. Mix to form a dough.
  4. Shape the dough into small balls and place them on a baking sheet lined with parchment paper.
  5. Make an indentation in each ball using your thumb or a finger.
  6. Spoon a small amount of raspberry jam into each indentation.
  7. Bake in the oven for about 12-15 minutes or until the cookies have a light golden brown color.
  8. Allow the cookies to cool on the baking sheet before transferring them to a wire rack to cool completely.
  9. Once the cookies have cooled, they are ready to be enjoyed!
