Lemon and Lime Mousse with Licorice and Raspberries

Treat yourself this delicious mousse with a blend of citrus and licorice. Ideal for both Easter and Midsummer celebrations, this elegant treat promises to captivate your senses.

Ingredients

  • 3 gelatin sheets
  • 3 egg yolks
  • 1.5 dl granulated sugar
  • 1 lemon
  • 1 lime
  • 3 dl whipped cream
  • Garnish: Fresh mint, fresh berries or fruit, Turkish pepper (crushed)

Instructions

  • Place gelatin sheets in a bowl of cold water.
  • Wash the lemon and lime. Grate the zest of the lemon and lime, and squeeze the juice into a saucepan.
  • Bring to a quick boil and remove from heat.
  • Squeeze water out of gelatin sheets and stir them into the saucepan until dissolved.
  • In a separate bowl, whisk egg yolks and sugar thoroughly.
  • Whip the cream in another bowl, not too stiff (somewhere in between).
  • Pour the lemon/lime juice into the bowl with egg yolks while stirring.
  • Gently fold in the whipped cream using a spatula. Pour the mixture into dessert bowls.
  • Chill in the refrigerator for approximately 60 minutes.
  • Garnish with your preferred toppings, such as fresh berries, fruits, or crushed licorice candies (like Turkish pepper crushed with a mortar).
